Tiramisu: The King of Italian Sweets

Ingredients
- 4 very fresh eggs with separated albumen and yolk
- 100 g of caster sugar
- 500 g of mascarpone
- 300 g of ladyfingers ladyfingers
- 300 ml of strong coffee cold
- Cocoa powder for dusting
- A pinch of salt
- Liqueur Marsala, Amaretto or coffee flavouring optional
Instructions
- Prepare the coffee: Brew a strong coffee and let it cool. If you wish, you can add a tablespoon of liqueur to enrich the flavour.
- Whip the yolks: In a bowl, whip the yolks with the sugar until light and fluffy. Add the mascarpone by spoonfuls, mixing gently until smooth and homogeneous.
- Whip the egg whites: In another bowl, whip the egg whites until stiff with a pinch of salt. Gently incorporate the whipped egg whites into the mascarpone cream, using a spatula and movements from bottom to top so as not to disassemble the mixture.
- Soak the ladyfingers: Quickly dip the ladyfingers into the cold coffee (and liqueur, if used), taking care not to soak them too much to prevent them from breaking.
- Assemble the Tiramisu: Place a layer of soaked ladyfingers in the bottom of an oven dish, then cover with a layer of mascarpone cream. Repeat the operation, finishing with the cream.
- Resting and Serving: Cover the Tiramisu and let it rest in the refrigerator for at least 4 hours, preferably overnight. Before serving, dust the surface with cocoa powder for the perfect finishing touch.
