Red Velvet Cake Recipe

Ingredients
- 180 g Butter
- 300 g of caster sugar
- 2 eggs
- 2 tablespoons of bitter cocoa powder
- 2 tablespoons of red food colouring
- 1 teaspoon of vanilla extract
- 240 ml of buttermilk
- 300 g of 00 flour
- 1 teaspoon of salt
- 1 teaspoon of bicarbonate of soda
- 1 tablespoon of white vinegar
Instructions
- Preparing the Dough
- Start by preheating the oven to 175°C. Meanwhile, mix the seed oil and caster sugar in a large bowl. Add the eggs, one at a time, beating well after each addition. Add the cocoa, red colouring and vanilla extract, stirring until smooth.
- Adding the Dry Ingredients
- In another bowl, sift together flour, salt and baking soda. Add these dry ingredients to the wet mixture alternating with the buttermilk, starting and ending with the dry ingredients. Make sure to stir well after each addition to avoid lumps forming.
- Final touches to the dough
- To finish the mixture, add the white vinegar and stir quickly. The vinegar will react with the baking soda to create bubbles that will make the cake soft and light.
- Cooking
- Pour the mixture into two 20 cm diameter cake tins, previously buttered and floured. Bake for about 25-30 minutes or until a toothpick inserted in the centre comes out clean. Let the cakes cool in the tins for 10 minutes, then transfer them to a wire rack to cool completely.
