Instructions
- Preparation of the dough: In a large bowl, beat together the butter and sugar until light and fluffy. Add the egg and vanilla essence, stirring until fully incorporated.
- In a separate bowl, sift together the flour, cocoa powder and salt. Add these dry ingredients to the butter mixture alternating with the milk, starting and ending with the dry ingredients. This helps to maintain the consistency of the dough.
- In a small container, mix white vinegar and bicarbonate of soda, allowing the reaction to foam slightly, then incorporate the mixture into the mixture. Add the red food colouring, stirring until uniformly coloured.
- Baking: Preheat the oven to 180°C and prepare a muffin tin with paper cups. Fill each ramekin to about 3/4 of its capacity with the mixture. If you wish, you can mix sugar and cinnamon and sprinkle this mixture over each muffin before baking to create a sweet and spicy crust.
- Bake the muffins for 18-20 minutes, or until a toothpick inserted in the centre comes out clean. Be careful not to overcook them to maintain their softness and internal moisture.
- Cooling: Let the muffins cool in the baking tin for 5 minutes before transferring them to a wire rack to cool completely.
