Pumpkin Pie: A Classic Recipe for Excellence
Pumpkin pie is an iconic dessert enjoyed by many cultures around the world for its sweet and spicy flavour. This dish has deep roots in culinary tradition, being a staple in autumn and winter celebrations, especially during Thanksgiving and Christmas. Its preparation combines the sweetness of pumpkin with a perfect mix of spices, creating an unforgettable taste experience. The following recipe has been perfected to offer an ideal balance of taste, texture and aroma, ensuring that your dessert will stand out and win the palate of anyone who tastes it.
Ingredients
- 450 g of pumpkin puree preferably fresh for a more intense flavour
- 1 brisée pastry roll ready-made or home-made, for a crunchy base
- 150 g of brown sugar for a rich and deep sweetness
- 1 teaspoon of cinnamon powder for a spicy touch
- 1/2 teaspoon of nutmeg to add heat
- 1/4 teaspoon of ground cloves for a penetrating aroma
- 1/4 teaspoon of powdered ginger for a spicy note
- 1/2 teaspoon of salt to balance the flavours
- 3 large eggs to tie the whole thing together
- 250 ml of fresh cream for a creamy texture
Instructions
- Preheat the oven to 180°C.
- Roll out the brisée dough in a 22 cm cake tin, prick the bottom with a fork and bake (cover with baking paper and dry pulses) for 10 minutes. Remove the paper and pulses and bake for a further 5 minutes to brown slightly. Leave to cool.
- Preparing the Stuffing
- In a large bowl, mix the pumpkin puree with brown sugar, cinnamon, nutmeg, cloves, ginger and salt.
- Add the eggs, beating well after each addition.
- Incorporate the fresh cream until smooth.
- Pour the filling into the prepared brisée pastry base.
- Cooking:
- Bake in the preheated oven at 180°C for 15 minutes.
- Reduce the temperature to 160°C and continue baking for about 40-50 minutes, or until a knife inserted into the centre of the cake comes out clean.
- Allow to cool completely before serving, ideally letting the cake rest for a few hours or overnight to allow the flavours to meld perfectly.
- Serve:
- Pumpkin pie is best enjoyed when served cold or at room temperature, accompanied by a generous portion of whipped cream or a scoop of vanilla ice cream for a contrast of flavours and temperatures.
Notes
For a more intense flavour and richer texture, we recommend using fresh pumpkin steamed and pureed.
