Cream Meringue
The cream meringue, an ethereal and delicious dessert that enchants the palate of anyone who tastes it, has a fascinating history dating back centuries. This dessert, which originated in 17th century Europe, has crossed eras and cultures to become a mainstay of international confectionery.
Ingredients
- 6 egg whites at room temperature
- 300 grams of caster sugar
- 1 teaspoon of vanilla extract
- 400 ml of fresh cream
- 100 grams of icing sugar
- Fresh fruit to taste for garnishing
Instructions
- Preheat the oven to 100°C and line a baking tray with baking paper.
- Start by whipping the egg whites with a pinch of salt using a planetary mixer or an electric mixer. Make sure the bowl and whisk are clean and free of grease.
- When the egg whites begin to whip and become frothy, gradually add the caster sugar while continuing to whip the egg whites. This step is crucial to obtain a firm and glossy consistency.
- After adding all the sugar, continue whipping the egg whites until they form stiff, shiny peaks. Add the vanilla extract and mix gently.
- Transfer the meringue onto a prepared baking tray forming a large circle or other desired shape. Make sure to create a slight depression in the centre to hold the cream.
- Bake the meringue in the preheated oven and bake for about 1 hour and 30 minutes, or until the surface is dry to the touch and lightly golden. A perfect meringue will have a crispy outer crust and a soft, delicate heart.
- Preparing the Cream
- While the meringue bakes, prepare the cream. In a large bowl, whip the cold cream with the icing sugar until soft but firm.
- When the meringue is ready and completely cooled, gently transfer it to a serving dish.
- Fill the centre of the meringue with the whipped cream, spreading it evenly over the surface. Make sure to leave an outer edge of meringue to maintain the shape.
- Garnish the meringue with fresh fruit to taste, such as strawberries, raspberries or blueberries. This addition will add a touch of freshness and colour to the dessert.
