Ingredients
- 300 g of 00 flour
- 400 g finely grated carrots
- 200 g of caster sugar
- 100 g of brown sugar
- 4 large eggs
- 250 ml of seed oil
- 1 sachet of baking powder
- 1 teaspoon of cinnamon powder
- 1/2 teaspoon of grated nutmeg
- 1 pinch of salt
- 100 g of chopped walnuts optional
- Icing sugar for decoration optional
Instructions
- Preparing carrots:
- Start by peeling the carrots and finely grating them. Make sure you get a fine texture to avoid too large pieces in the final mixture.
- Dough preparation:
- In a large bowl, beat the eggs with the caster sugar and brown sugar until frothy. Gradually add the seed oil while continuing to mix.
- Incorporation of the dry ingredients:
- Sift the flour, baking powder, cinnamon, nutmeg and salt into another bowl. Incorporate these dry ingredients into the egg and sugar mixture, stirring gently with a spatula until well blended.
- Carrots and nuts added:
- Add grated carrots and, if desired, chopped nuts to the mixture, stirring until everything is evenly distributed.
- Cooking:
- Pour the dough into a previously buttered and floured baking tin. Bake in a preheated oven at 180°C for about 40-45 minutes, or until a toothpick inserted in the centre of the cake comes out clean.
- Decoration:
- Let the cake cool completely before removing it from the baking tin. If you wish, you can dust the surface with icing sugar or prepare a cream cheese icing for an extra touch of elegance.
