Berry Cheesecake: A Delight to Taste

Ingredients
- 200 g of dry biscuits digestives or similar
- 100 g of melted butter
- 1 tablespoon of sugar
- For the filling:
- 500 g of cream cheese Philadelphia type
- 200 g of sugar
- 4 eggs
- 1 teaspoon of vanilla extract
- 200 ml of fresh cream
- 200 g of mixed berries strawberries, blueberries, raspberries
- For decoration:
- Fresh berries
- Mint leaves
Instructions
- Start by crumbling the dry biscuits in a blender to a fine consistency.
- Transfer the crumbled biscuits into a bowl and add the melted butter and sugar.
- Mix well until a homogeneous mixture is obtained.
- Pour the resulting mixture into a cheesecake tin previously lined with baking paper.
- Press the mixture into the bottom of the baking tin evenly with the back of a spoon.
- Place the baking tin in the refrigerator for at least 30 minutes to firm up the base.
- Preparing the Stuffing
- In a large bowl, beat the cream cheese with the sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Incorporate the vanilla extract and fresh cream into the mixture, stirring until smooth.
- Pour the filling onto the already cooled biscuit base and level the surface with a spatula.
- Spread the berries evenly over the surface of the filling.
- Baking and Decorating:
- Preheat the oven to 160°C.
- Bake the cheesecake and cook for about 50-60 minutes, or until the surface is lightly golden and the centre is slightly shaky.
- Once cooked, turn off the oven and leave the cheesecake inside with the door ajar for another 30 minutes.
- After this time, take the cheesecake out of the oven and allow it to cool completely to room temperature.
- Once cooled, place the cheesecake in the refrigerator for at least 4 hours, preferably overnight.
- Before serving, decorate the cheesecake with fresh berries and mint leaves for an eye-catching presentation.
- Slice and serve this delicacy to your guests.
